Scill's journey, our family values, and the story behind our authentic poffertjes
Hi, I'm Scill — founder of Little Dutch Bites, home of small, fluffy, sweet Dutch poffertjes lovingly made the traditional way.
I first discovered poffertjes at a local festival in Bedfordshire many years ago, and instantly thought, "I'd love to give that a go." Life was busy — I was working as a children's nurse in the NHS and raising two young children — but I kept making poffertjes at home for family and friends. Their constant encouragement ("these are amazing, you should sell them!") planted a seed that never really left.
During COVID I found myself craving more people contact, more creativity, and the instant joy that comes from giving someone something you've made with your own hands. With the support of my family — my husband (100% Dutch!) and our two children — I decided it was finally time. In September 2021, Little Dutch Bites officially launched at our hometown market, and we've been flipping poffertjes ever since.
Poffertjes are part of our heritage. Being half Dutch myself, serving this traditional treat feels like sharing a piece of home, and customers love hearing the story behind it. What began with a simple gazebo and a single pan has grown into a business with a loyal following, a lovely little trailer, and a reputation for warm service and delicious, authentically made bites.
Inclusivity is at the heart of what we do. Although we're meat-eaters, our poffertjes are all made vegan, and we often offer gluten-free options too — something that's become incredibly meaningful for customers who struggle to find allergy-friendly sweet treats. Seeing their delight is one of the most rewarding parts of what we do.
For us, it's all about connection: the conversations at the hatch, the families watching their poffertjes being made, the returning customers who bring friends along to try them for the first time. We never set out to build an empire — just a business rooted in joy, authenticity, and great food. Success, for me, is seeing someone take that first bite and light up.
As for the future? We're happy exactly where we are, growing steadily and thoughtfully. We may introduce a new Dutch product, and maybe one day we'll expand a little more… but we'll always stay true to what Little Dutch Bites is all about: family, heritage, and sharing small moments of happiness, one bite at a time.
